almond milk without gums or emulsifiers
If you have started scanning labels for ‘gellan gum’ and ‘sunflower lecithin’, here is what an almond milk looks like without them, and the honest trade it asks for.
what is not in the bottle
No gums. No emulsifiers. No stabilisers. No preservatives, no refined sugar, no added vitamins. The full ingredient list of our natural almond milk is: almonds, water, a pinch of pink salt.
We are not going to tell you that gums are dangerous, that is not our claim to make. The honest version is simpler: a milk this dense with almonds does not need them, so we do not use them.
why most almond milk needs additives
A carton that has to hold a thin suspension together for months at room temperature has real problems to solve. Water and ground nuts want to separate within hours; emulsifiers and gums stop that. Vitamins are added back because at 2–4% almonds there is not much nut left to contribute.
Every one of those ingredients exists for a good reason. The reason is shelf life. We just chose to build our product around freshness instead.
the trade
Our milk is made the morning it reaches you and it is good for about two days, refrigerated. It separates in the bottle, because nothing stops it, shake it and it comes back together.
That means planning a little: it is a milk you subscribe to or pick up fresh, not one you stockpile. We think the trade is worth it, and we would rather tell you exactly what is in the bottle than make it last longer.
